Looking forward to Daylight Saving time, the weather gods give you a last dash of cold, wet, grey, windy days. It becomes time to have something warm and comforting to wash the seasonal disorder syndrome away. So, how about an easy soup recipe that is super easy to make and will warm and brighten your mood? In just twelve minutes, you can make a big bowl of Prawn Soup.
Prawn Soup
Ready in 12 minutes — serves 2
Ingredients- Rice (enough for two big bowls or more)
- Chopped scallions
- Olive oil
- 1 bag cooked frozen shrimp
- 1 can coconut milk
- 2 ½ tins of water
- 2 Tbsp Korma Curry paste (an Indian curry ingredient)
- Homemade sourdough bread, for serving (see note below)
Get out your rice, enough for two big bowls or more. Toast the rice in a dry skillet. Add chopped scallions and a splash of olive oil and stir until the onions soften.
Take out a bag of cooked frozen shrimp and place the bag in warm water to defrost. Once defrosted, dump shrimp on the cutting board and chop to medium-fine size.
Add a can of coconut milk, two and a half tins of water, and two Tbsp of Korma Curry paste. Bring all of this to a boil and then simmer for 12 minutes.
Now, for the most important task. Make a friend of someone who makes homemade sourdough bread. Don’t bother to commit yourself to that. Caring for a sourdough starter is a commitment larger than marriage. Trade one of your talents for the bread. Any chore that makes you babysit daily to keep it alive and then names it like Stella or Delilah is just too much for this Thoroughbroad. And yes, my sourdough gal pals have named theirs Fanny and Babe!
